The 2022 week 32 plant based menu plan is complete.
It has become quite customary for many of the meals planned for one week, to move to the next. More often than not this is due to the fact that one recipe will feed us for several days. Because the ingredients are on hand, I simply move those meals to the following week. Week 31 brought us together for 2 family meals which were originally not planned. I prepared one for the 6 of us and my daughter prepared one for the 3 of us. Many meals from week 31 reappear during 2022 week 32.

Hits and Misses
We won’t call this chicken salad in front of the ‘Ole Buckeye since he has an aversion to false claims. That being said, this was a great plant based salad. If we hadn’t already enjoyed the chickpea avocado salad this one would have been a favorite.
Sonoma Chickpea “Chicken” Salad
Delicious bread. I stored it in the refrigerator and found it to be much better room temperature rather than cold. It was good in the morning but also as a snack or dessert.
Vegan Blueberry Banana Oat Bread
This creation sounds weird but it was actually rather tasty. We felt that the almond butter overwhelmed the avocado, so would use less in the future. This would also make a great avocado toast without the butter and with a sprinkle of everything bagel seasoning. We will give that a try. This is a great way to introduce more kale especially in the morning.
I needed to use peaches and I had all the ingredients for this salad. The ‘Ole Buckeye once again rolled his eyes when he saw the ingredients, but wow, this was a great light summer salad.
We had our first family dinner together since our oldest grand daughter left for rush at Auburn. Missed having all 7 of us. We had a great Italian meal together although I did incorporate chicken for the masses. All of the recipes are family favorites aside from the Israeli salad which was a new recipe. It is now added to our family favs. It was a hit…very delicious.

Recap
The eating adventures continue and the learning curve expands. Our daughter has found a great food delivery specializing in plant based and vegan meals, many of which she has shared and they are delicious. She is extremely happy with “Purple Carrot“. I have planned week 32. The Tuesday of week 33 we will have leftovers. Hopefully we will eat all of our perishables since we are going on a 2 week vacation which will include a cruise on Windstar to Alaska. Obviously there will be no menu plans for the next several weeks. However it will be interesting to see how we manage to continue our eating plan while cruising. The adventure continues. Bon Appetit!
