Breakfast
I made this coffee cake over the weekend as a special treat and also with the thought that it may serve as a dessert as well as a coffee cake. It is a good coffee cake however if I make it again I will definitely use less sweetener and more fruit. It was enjoyable, but more as a small addition to breakfast and not a complete breakfast.

Lunch
This sandwich is a great fall back when I don’t have anything specific in mind. I nearly always have ingredients on hand and change it up depending on what I do have. We pile ingredients on toasted Ezekiel bread. This week we had fresh radishes from the Farmers’ market, so the sandwich consisted of hummus spread on one slice of bread…avocado on the other. Thinly sliced cucumber, red onion, cherry tomato, lettuce and radish completed the creation.

A great hearty soup made easily in the Instant Pot which will be repeated.

Dinner
Years age I made an easy red pepper pasta that we totally enjoyed. I had a jar of roasted red peppers and looked for an interesting recipe. This was successful and enjoyable, although next time I will add a protein or make it as a side.

Just as the recipe title infers…this is an easy tasty baked chicken. In fact years ag the ‘Ole Buckeye actually prepared this for dinner himself. I haven’t made this in years, but it will definitely reappear.
I prepared this broccoli as a side with the easy baked chicken. It was a nice accompaniment to the chicken and a great change of pace from our normal roasted broccoli. I have enough bang bang sauce remaining for another batch.

We love meatballs and I have multiple recipes. This is yet another great recipe that I will definitely repeat. Another plus is that there are enough meatballs for several meals. I served them with Tzatziki sauce from Trader Joes which is always delicious

We had a delicious week of great eating capped off by a Mother’s Day meal created by the ‘Ole Buckeye and my daughter. He grilled a marinated flank steak and she prepared Ina’s baked potatoes and roasted fennel. Dessert and champagne capped off the feast. We shared a multi layer slice of coconut cake! It is always great to close the kitchen for the day. Now on to the next adventure. Bon Appetit!
