For the next 3 weeks we will be splitting our weeks between time shares in Florida. We are giving being “snow birds” a try. I am not making specific menu plans. We will spend 2 weeks on the east coast and 1 week on the Gulf coast. Obviously we will be exploring new restaurant opportunities and I am not certain how often we will be eating out. Historically we have breakfasts and lunches “in”, and our evening meals “out” with an occasional breakfast and lunch at a recommended restaurant. With that being said my plan for the upcoming weeks is to list recipes that I will possibly be making. By preparing the spices and condiments needed I avoid excessive grocery shopping. We will also be taking some meat and perishables in coolers.
Most of these recipes we have used in timeshares in past years. They are tried and true as far as ease of preparation and limited ingredients to purchase upon arrival. We are packing more than we normally do since we are driving and have the space. (Much to the dismay of the ‘Ole Buckeye.) I am even taking my crockpot. (I actually thought about the air fryer, but that would have been pushing it.

Hits and Misses
I have lots of great recipes for healthy chili…this one will not make it to that group. It did provide a filling lunch, but lacked the flavor that we enjoy.
I didn’t have chicken thighs, so I used breasts instead. That is most likely why there weren’t enough juices for the sauce. The flavor was great, but it needed more drippings/sauce. I also forgot to take a picture so used one from the link.
Slow Cooker Lemon Thyme Chicken
This is a great basic meatball recipe. I used Rao marinara instead of making my own and served it over chickpea pasta.
I keep attempting plant based meatless loafs and have been fairly unsuccessful. Even though this one was in the slow cooker…I think it was overcooked…very dry but the sauce helped. I can’t expect the same flavor as my favorite Bobby’s Flay’s meatloaf but I would like to find something enjoyable.
Restaurant worthy salmon…moist, flavorful and absolutely delicious. This recipe is now at the top of my salmon preparation list. Outstanding and company worthy!
Recap
We have arrived in Florida and are beginning our new adventure testing what it is like going South for a portion of the winter. Our first day here…cold, windy and temperatures cooler than at home. Sigh. We relaxed, provisioned fresh produce and enjoyed the sights and sounds of the Atlantic surf. Our accommodations are rather disappointing, but we will make the best of it. We have the opportunity to reconnect with several friends, so it will be more than worthwhile. Hopefully we can maintain our healthy choices while enjoying the sun and surf. Bon Appetit!
