The 2024 week 46 menu plan is complete and yet again I have plenty of leftovers from week 45. I totally enjoy reheating successful meals to serve a second and sometimes third time. Not only is it economical, but I spend much less time in the kitchen.

Hits and Misses
We had a week’s worth of big Hits. We have had the risotto in the past but both of the meatball recipes were new. I served the Greek meatballs with homemade tzatziki which was important for flavor. The Marry Me Chicken meatballs were delicious and I will definitely include them on the rotation. The biggest surprise was the Chicken Marbella. I picked the recipe from one of my favorite blogs just after returning from Marbella, Spain in September. The layers of flavor and caramelization were outstanding. I used chicken thighs rather than whole chickens. Company worthy.

As I look back I did a lot of cooking last week. But this week I have been rewarded with several nights of eat again meals offering me time to accomplish several other things that I have neglected. The holidays are rapidly approaching with Thanksgiving on the horizon and I have lots of menu plans in the interim as well as planning an inspiring Thanksgiving meal.
