2024 Week 42 Menu Plan

The 2024 week 42 menu plan is complete.

BREAKFAST

Breakfasts this week consist of leftovers for the ‘Ole Buckeye. I obviously over prepared last week.

Cottage Cheese Pancakes *

Lunch

In order not to over prepare lunches I am anticipating that the soups will supply several lunches

Crockpot Tortellini Soup*

Creamy Chicken Gnocchi Soup*

Black Bean Walnut Burger

Dinner

I have filled our evenings with tried and true dinners that I have not repeated for quite some time. The only new recipe is for the chicken Marbella in honor of our recent return from Marbella Spain.

Puttanesca

Caramelized Onion Florentine Rotini

Dump and Bake Vegan Tuscan Orzo

Roasted Sausages and Grapes

Chicken Marbella*

Creamy Asiago Chicken

Maple Roasted Delicata Squash

Hits and Misses

BREAKFAST

What a great way to add extra nutrition to a breakfast bowl.

Blueberry Chia Pudding *

This is a great granola…I just needed to encourage the ‘Ole Buckeye to eat it with yogurt or oatmeal and not as a big bowl of cereal. A keeper!

Gluten Free Granola

This is one of the ‘Ole Buckeyes favorite egg dishes. We had it for Brunch on Sunday and both of us enjoyed it.

Cottage Cheese Egg Bake

DINNER

Peaches on sale? This has been my go-to late summer dessert. I seldom make desserts and I have learned that when I do I don’t cut corners. If we are going to have dessert…we should enjoy it and this one is great.

Peach Cobbler

We had homemade sour dough hamburger buns with this new sloppy joe recipe. It made for a great hearty sandwich for dinner.

Sour Dough Hamburger Buns

Sloppy Joes*

This veggie burger is great. I made a double batch for multiple meals. Always enjoyable. Some of my best plant based recipes are from my Plant You cookbook and website.

Bliss Burgers

Recap

Last week was filled with leftover meals and pop up social evenings. My son smoked a brisket on Saturday and we watched college football. We enjoyed pizza at a happy hour earlier in the week providing a light dinner. Once again our plans changed and I have moved several meals into the week ahead. At least I know that I have most of the ingredients on hand. The adventure continues…Bon Appetit!
