2022 Week 40 Menu Plan

The 2022 week 40 menu plan is complete. There are no new recipes…shocker. Hurricane Ian arrived this past weekend knocking out our power on Saturday night. On Sunday morning we realized that the refrigerator and freezer were not cooling. We have a small beverage refrigerator in the kitchen and an old refrigerator/freezer in the garage. After some major reorganizing, we were able to move things, but that required removing bulky items from the freezer to accommodate more the expensive meats. By taking things from the freezer we have reduced the “shelf life”. The menu plan reflects the effort to salvage as much as possible in a timely manner.

Because we entertained guests over the weekend, we also have an abundance of leftovers. Fortunately they are smaller servings providing breakfasts and lunches for the 2 of us for several days, however they take up quite a bit of refrigerator space.

Breakfast

The bulk of our breakfasts consists of leftovers, however the chia pudding and overnight oats are recipes planned several weeks ago which I have added this week. The recipes are here.

Lunch

The lunches for the week are all leftovers from last week. 

Dinner

I never made the brisket last weekend, but there is no room in the freezer, so I will be fixing it for the two of us. Hopefully the refrigerator repairs will be complete and I can freeze the leftovers.

Hits and Misses

I loved this recipe because it was quick and easy and very tasty. I have been making quinoa in advance and freezing portions to make for easy preparation.

One Pan Mexican Quinoa

Wow! It isn’t often that I find a recipe that truly exceeds all expectations. This was a winner. Delicious and we didn’t miss the meat at all! I try to use mushrooms as much as possible during the week because they are so healthy. This recipe is definitely rotation worthy.

Weekend Meals

The following recipes were prepared for our guests. They are tried and true family favorites. We grilled gourmet burgers as well and I served those with broccoli salad and the ‘Ole Buckeye’s famous guacamole.

Recap

The week ended on a sour note, and the weather was disappointing, but we did have a great visit with our guests. We enjoyed good food, good wine, and great conversation. The goal now is prevent spoilage and enjoy our refrigerator stash! The adventure continues. Bon Appetit
