2022 Week 22 Plant Based Menu Plan

The 2022 week 22 plant based menu plan is complete and this new adventure in eating continues.

Breakfast

The 2022 week 22 breakfast plan is totally reliant on oatmeal. I have decided that there are more ways to prepare oatmeal than I ever dreamed and so far they have been both filling and enjoyable.

Tropical Mango Oatmeal

Granola/Hemp Seed Bars

Lunch

Soup and salad will be the mainstay for lunch with a quesadilla recipe (without the cheese) thrown in.

Dinner

Planning dinner has been the most difficult assignment during this transition. We are creatures of habit and our habit is a heavy meat meal in the evening. So far over these beginning weeks the meatless meals have been satisfying and filling. However they have also been interspersed with meat or fish meals along the way. This week I plan the Mississippi pot roast on Sunday, but the rest of the week will be meatless. I will be rounding out the planned meals with some satisfying salads. I am hoping that we will adjust to this type of eating and eventually a large dinner salad will be adequate for an entire meal.

There were 3 meals that were hits even though they were not plant based. They were prepared in order to work toward the goal of utilizing foods on hand.

Recap

We had a mixture of meal types over the past week. I spent hours researching the plant based diet blogs and investigating the different ways of incorporating plants into nutritious meals providing the protein and nutrients we need to stay healthy but also satisfied. I know that if we are not satisfied this way of eating will certainly fail. The journey continues. Bon Appetit!
